Raw Coconut Nectar

When the coconut tree is tapped, it produces a naturally-sweet, nutrient rich 'sap' that exudes from the coconut blossoms. The sap is very low glycemic and contains 17 amino acids, minerals, vit C, broad-spectrum B vitamins and has a nearly neutral PH.

Small batches ensure that our pure, low glycemic nectar, made from this natural sap, is a raw, enzymatically alive product, minimally evaporated at low temperatures (only to remove excess moisture and allow sap to thicken), never exceeding an average summer day in the tropics. Sap nectar is .5% glucose, 1.5% fructose, 16% sucrose, and 82% inulin.

Recipe Ideas

The naturally sweet, mild flavour of our nectar is an ideal sweetener for use on any raw or even cooked food. Try them on pancakes, cereal, in smoothies, salad dressings, desserts, to sweeten teas, or even better as a topping on our raw ice cream! The nectar does NOT have a coco-nutty flavour.

Coconut Nectar Ingredients:

Raw coconut sap grown without chemicals, pesticides or herbicides. (Organic Certification pending).

Each hand made batch may vary slightly in colour, flavour, and glycemic index. Depending on the season and weather conditions, the GI of this product may range plus or minus 5, with an average glycemic index of 35).

Mango Tropical Salad by Angelique M

1 large mango (peeled, seeded, and diced)

1 cucumber (peeled, seeded, and diced

1 orange (peeled, seeded, and diced)

1 red bell pepper (seeded, and finely diced)

3 tablespoons green jalapeno pepper (minced, approx. 1 medium pepper)

2 tablespoons dried shredded coconut

2-3 tablespoons coconut nectar

1 tablespoon lemon juice

approx. 10 mint leaves for garnish (thinly julienned or minced)

Combine all ingredients in a bowl, or reserve the mint and sprinkle that on top as a garnish.

Serve immediately. Can be eaten alone as a salad, on top of fresh greens, inside

a nori sheet or wrap, or use as a salsa. Very versatile, tongue-tickling, and refreshing!

This is not really the same as a liquified coconut sugar, it has a really strong flavor that doesn't always mix in well with things. Worth experimenting though. Seemingly higher glycemic than the dry coconut sugar.
