Coconut oil is nature’s greatest source of medium chain fatty acids (MCFAs).  MCFAs, unlike other oils, are easily digested and  completely broken down to individual fatty acids which don’t circulate the bloodstream to the degree that other fats do, but are used in the liver as a source of fuel to produce energy.  Also, because they are so easily digested, they contribute to the absorption of other nutrients such as fat soluble vitamins (e.g. vitamin A,D,E,K, and beta carotene).

The fatty acid content of coconut oil is: Caprylic (C8:0) 7.8 %, Capric (C10:0) 6.7%, and Lauric (C12:0) 47.5 %.
