A RARE BREED
Purple
Corn is a rare commodity. Peru is the only country that produces purple
corn commercially. Annually, around 12,000 to 15,000 acres are planted
with non-GMO/non-hybridized purple corn.
While there are
multiple varieties of purple corn, all of them originated from an
ancestral line called "Kculli", still cultivated in Peru. The Kculli
line is very old. Ancient objects in the shape of these particular ears
of corn have been found in archeological sites at least 2,500 years
old. The Purple Corn we offer is from this ORIGINAL LINE, which helps
to explain it's great taste and nutrition levels.
As interesting as it's history is Purple Corn's promise to your taste buds and health. For starters:

Blueberries have gotten lots of press lately and are regarded by many
as the top antioxidant food. Yet, it's a little known fact that Purple
Corn has a higher antioxidant capacity and anti-free-radical effect
than blueberries and higher or similar anthocyanine and phenolic
contents.

WHAT MAKES PURPLE CORN SO POWERFUL?
Why
is Purple Corn such a powerful food? To understand this we need to
explain a bit about antioxidants (anthocyanidins, in particular).
The
color of the purple corn comes from a group of chemical compounds
called anthocyanines (from the Greek word Anthos: flower and Kyanos:
blue). Anthocyanines are the largest group of water-soluble pigments in
the vegetal kingdom. Within this group are the complex flavonoids
called anthocyanidins that produce blue, purple or red colors. (This is
part of the reason you're often encouraged to eat a variety of colorful
foods.)
Research shows that anthocyanidins like those found in
purple corn encourage connective tissue regeneration, are
anti-inflammatory and positively influence cholesterol. Anthocyanidins
also seem to stabilize and protect capillaries from oxidative damage
and have been shown to support healthy connective tissue, promote
collagen formation and improve microcirculation.
THE PROOF
More and more research is pointing to the proven health benefits of Purple Corn consumption. Here are a couple of examples:
In
a pre-clinical study, Tsuda & col. (2003) studied the effects of
purple corn on obesity and diabetes. They compared two sample groups.
Both groups consumed a diet rich in fats during 12 weeks, but one of
the groups also received purple corn pigments. Compared with the
control group the group consuming anthocyanidins didn't gain any
weight, nor suffer hypertrophy of the fat tissues. The purple corn
eaters didn't show hyperglycemia, hyperinsulinemia, hyperleptinemia, or
an increase in levels of the genetic codes that produce the factor for
tumoral necrosis or the enzymes related to the synthesis of fatty acids
and triglycerides. In comparison, the group that received no purple
corn extract and ate only a fat rich diet, showed an increase of more
than 100% in all those parameters.
In Japan, a group of
researchers from the Medical School of Nagoya demonstrated that the
pigment in purple corn impeded the development of a type of colon
disease.
Overall, there are good nutritional and scientific
reasons to use the antioxidant anthocyanidins present in purple corn
kernels, with obvious benefits for the prevention of obesity and blood
sugar disorders. Even the US Pharmacopoeia considers them good for
lowering hypertension!
HOW TO USE PURPLE CORN
The first step
is to take 1/4 lb. (113 grams) of the kernels and soak in approximately
a quart or liter (32-33 oz.) of lukewarm water for 8 hours (or
overnight). This can be repeated 2-3 times. The left-over kernels can
be crushed and/or processed into crackers, pates, dressings and more!
Also,
you can get least 8-12 bright purple 'Soaks' from each bag of Nature's
First Law Purple Corn Kernels. And each soak yields over 32 oz. of the
'purple' water! That's a lot of antioxidant-rich juice.
***WARNING:
Although you can, we do not recommend eating the Purple Corn Kernels
unsoaked or straight out of the bag because they are very hard and
could damage teeth! Be careful, you have been warned.***
OUR FAVORITE RECIPES
Chicha Morada
8-16 oz. of Purple Corn Water
8 oz. Fresh Pineapple Juice
2 Cinnamon Sticks
1 pinch Raw Vanilla Bean
First
soak 1/4 lb. (113 grams) of Purple Corn Kernels in 1 qt. of warm water
with 2 cinnamon sticks. Drain and save the corn for other recipes. Take
the Purple Juice and either blend or vigorously mix all ingredients.
This can also be left to ferment overnight. Enjoy!
Purple Coconut Magic
1 Fresh Young Coconut (water + inner flesh)
1 tablespoon Coconut Oil
8-16 oz. Purple Corn Water
1 pinch Sea Salt
First
soak 1/4 lb. (113 grams) of Purple Corn Kernels in 1 qt. of warm water.
Drain and save the corn for other recipes. Take the Purple Juice and
blend with the other ingredients on high until smooth. Enjoy!
The Original Cacao Drink!
12-16 oz. Purple Corn Water
3-4 tablespoons Raw Cacao Nibs
1 tablespoon Coconut Oil (optional)
1 pinch Raw Vanilla Bean
1 tablespoon Raw Maca (optional)
1 pinch Organic Hot Aji Pepper
2 tablespoons Raw Mesquite Meal
1 pinch Sea Salt
First
soak 1/4 lb. (113 grams) of Purple Corn Kernels in 1 qt. of warm water.
Drain and save the corn for other recipes. Take the Purple Juice and
blend on high with other ingredients until the shake is smooth and
