Nowhere else can you find miso made with the small red azuki beans, highly regarded for their nutritional and healing properties in Oriental medicine. Festive burgundy in color, this delicate miso is ideal for seasoning light soups, bean dishes, sauces, and salad dressings. Made with brown rice and azuki beans. No gluten or soy ingredients.

Ingredients: Deep well water, lightly polished organic brown rice, organic azuki beans, sun-dried sea salt, organic sea vegetables and koji culture.

Although this is a living product, the beans and rice have been heated above 120 deg F.

Please note that since this is a live product, fermentation will occur during shipping which may cause pressure inside the jar and some leakage.  This is normal when being shipped and it does not alter the quality or freshness of the product.  If you would like this shipped in an insulated container and ice packs to keep it cool during shipping, please leave a comment upon checkout and we will add this to your order.  There is an additional fee for this and we will contact you with the price for the container and ice packs for your approval before shipping.  Once you receive the product please refrigerate it before opening since there may be pressure built up during shipping.

Amazing soy-free miso! January 10, 2018

I love this miso. I can't tolerate soy so finding this was a huge convenience for me. More than that, it's delicious. I use it as the base for all kinds of soups, and even a little bit in some other recipes for some depth of flavour and instead of salt. It's wonderful, I highly recommend it.

As stated, lovely deep burgundy colour.  Flavour is lighter than traditional miso and it also has a hint of sweetness.  Nice for an occasional shift of flavours.
