While many people think that buckwheat is a cereal grain, it is actually a fruit seed that is related to rhubarb and sorrel making it a suitable substitute for grains for people who are sensitive to wheat or other grains that contain protein glutens. Buckwheat flowers are very fragrant and are attractive to bees that use them to produce a special, strongly flavored, dark honey. Excellent source of manganese and magnesium and a good source of iron, calcium and selenium. Also rich in amino acids lycine and tryptophan. Buckwheat also contains rutin, a heteroside with Vitamin K activity, which strengthens fragile capillary walls. Rutin thus encourages good circulation. Flavonoids like rutin, are phytonutrients that protect against disease by extending the action of vitamin C and acting as antioxidants. Buckwheat's lipid-lowering activity is largely due to rutin and other flavonoid compounds. These compounds help maintain blood flow, keep platelets from clotting excessively (platelets are compounds in blood that, when triggered, clump together, thus preventing excessive blood loss, and protect LDL from free radical oxidation into potentially harmful cholesterol oxides. All these actions help to protect against heart disease.

I sprout buckwheat groats and at times grow them for their greens. Sprouting them is so easy. Soak them in a wide mouth jar for 24 hours to draw out the mucilage (cover with a linen or other cloth). I rinse them well in cool tap water then end with a rinse in distilled or reverse osmosis water. Drain well. Cover the top of the jar with a screen, or transfer them to a strainer cradled over a bowl. Cover lightly with a linen or other breathable cloth. Rinse 2 to 3 times a day. Eat when the sprout size suits you. I like a long tail. Growing the seed in soil soil produces a lovely leafy green. I mix the sprouts with fresh or frozen organic fruit and organic protein power, covered with organic raw nut milk for breakfast of a snack during the day. The greens go great in salads and sandwiches. Create a super healthy meal that you will enjoy.

Excellent product, I sprout 1 cup and add it to my raw crackers that I make. Also dehydrate the soaked buckwheat for a breakfast cereal

I was very disappointed when I checked the provenance of this product and see that it's from China.....will not consume any products from China so I can't review the quality
